Why are insurance companies such a pain to deal with?

Insurance companies are big businesses and they have share holders and owners that they have to cater to. And they are trying to make as much money as possible and they do that in part by paying out as little as possible on claims. So if an adjuster pays out less than a case is worth, that adjuster did a good job. If they hire an attorney, that is very skilled, and the accident victim has an attorney that's not so skilled, and the defense attorney for the insurance carrier wins, that's a win for the insurance company.
